Spaghetti Sauce

I have no picture of the completed dish because I made it then Six and I ate it then we went swimming in my cousin’s pool and I totally didn’t realize I didn’t take a picture of it until a few minutes ago. But it’s useful to know that you only need the small amount of ingredients shown to make this sauce.

Aside from the chocolate cake, this is the only recipe Six ate. He was deeply suspicious of it, but he did eat it. I think he knew I was suffering from how hot it has been (it was 112 degrees yesterday) and took pity on me. He really liked it!

It’s very easy to make, never as easy as opening a jar (or can) of premade sauce and if that is what you have the energy for, do that. No judgment, safe space.

This is not Contessa Garten’s recipe, it is something I simplified from a recipe Felicia emailed me years ago. Her recipe has Italian sausage and wine in it. Mine does not. I don’t like sausage and I drank all my wine a couple days ago and it was too hot to even think about going to the store.

I boil up a pound of pasta and there is more than enough sauce for that amount. If I have any leftover, I whir it up in the blender and use it to make english muffin pizzas in my new air fryer. Thank you to Anna for suggesting I get one, it’s a life saver in this heat.

1 28oz can diced tomatoes

1 8oz can tomato sauce

1 6oz can tomato paste

2 tablespoons olive oil

¼ teaspoon chili flakes

½ cup water

2 cloves minced garlic (or two frozen cubes)

3 frozen cubes basil (probably ½ teaspoon dried basil)

Kosher Salt

 

  • Warm a 5ish quart pot and then put in the tomato paste and the olive oil.
  • Gently heat the tomato paste, this is a trick from America’s Test Kitchen which adds a certain depth of yummy.
  • Add in the tomato sauce, diced tomatoes, water, garlic and basil.
  • Add the kosher salt. How much? Well, how salty are your tomato products? Are they low sodium? Then more salt. Already salty? Then less. Start with a teaspoon and then taste and go from there.
  • Stir it all together then bring to a gentle boil.
  • Check for flavor. Here is where you can add more salt or those yummy chili flakes.
  • Turn down the heat and simmer about half an hour.
  • Pour over pasta or whir up in a blender and use as a pizza sauce.
